Creamy Garlic Chicken Tenders
Tender chicken cooked in a rich white wine, garlic, and Parmigiano-Reggiano cream sauce for a fast, restaurant-quality meal.
- 30 minutes
- one pan
Most weeknight dinners trade flavor for speed, but this one proves you do not need an hour of prep or a sink full of dirty dishes to make something incredible. Everything comes together in a single skillet, which means every bit of flavor from searing the chicken stays right where it belongs: in the pan, ready to build the sauce.
After flash-searing the chicken tenders, you toss the shallots and garlic directly into those hot, savory drippings. A splash of white wine lifts up all the caramelized bits stuck to the bottom, creating a deep, aromatic base before you stir in the heavy cream and Parmigiano-Reggiano. In under ten minutes, that liquid reduces into a velvety, restaurant-quality garlic cream sauce that coats every single tender.
The real beauty of this recipe is how effortlessly it turns into a full meal. That rich garlic parmesan sauce is liquid gold, and it begs to be paired with a hearty side. Spoon it hot over a bed of al dente fettuccine, a bowl of fluffy white rice, or a big mound of buttery mashed potatoes. Whichever base you choose, grab some bread to clean your plate, because you will not want to leave a single drop behind.
Ingredients
Chicken & Seasoning
- 1 lb chicken tenders, tendons removed
- Salt and freshly ground black pepper, to taste
- 1 tbsp butter or oil, for searing
Aromatics & Deglazing
- 2 medium shallots, finely diced
- 5 cloves garlic, thinly sliced
- ½ cup dry white wine
Ingredient Note: If you prefer to cook without alcohol, swap the white wine for ½ cup chicken stock mixed with 1 tsp lemon juice or white wine vinegar to keep that bright, balanced acidity.
Cream Sauce
- 1½ cups heavy cream
- 3 oz Parmigiano-Reggiano, microplaned
- 1 tsp chicken bouillon paste
For Serving (Optional)
- Cooked pasta, white rice, or mashed potatoes
Instructions
- Prep the Chicken: Remove the tendons from the chicken tenders. Place each tendon through the tines of a fork, grip the exposed tendon tip with a paper towel, and pull firmly to extract it cleanly. Season one side of the tenders with salt and freshly cracked black pepper.
- Prep Garlic and Shallots: Thinly slice the garlic and finely dice the shallot.
- Sear the Chicken: Heat butter (or cooking oil) in a pan over medium-high heat. Lay the chicken tenders in the pan, slanting them away from you to avoid splashes. Season the second side with salt and pepper. Sear for about 90 seconds until golden brown, flip, and cook for another 30 seconds. Remove the chicken from the pan immediately. The chicken should be slightly underdone so it finishes cooking in the sauce later.
- Sauté Garlic and Shallots: Reduce the pan to medium heat. Add the sliced garlic and diced shallots directly to the same pan. Sauté for just over 1 minute until fragrant and lightly golden brown, scraping up the flavorful browned bits on the bottom.
- Deglaze with Wine: Pour in the dry white wine and use a spoon to scrape up all the remaining fond from the bottom of the pan. Cook until the wine reduces down and the pan is almost dry.
- Build the Sauce: Lower the heat to medium-low and pour in the heavy cream. Add the chicken bouillon paste and whisk until completely dissolved and integrated.
- Incorporate Cheese: Bring the cream mixture to a gentle bubble. Gradually whisk in the microplaned Parmigiano-Reggiano a little at a time until melted, smooth, and thickened.
- Simmer & Finish: Lower the heat to low and return the chicken tenders (along with any rested juices) back into the sauce. Simmer gently for 90 seconds to warm the chicken through and finish cooking. Top with optional fresh basil or chili flakes, and serve hot over pasta, rice, or mashed potatoes.
