There is a quiet, profound joy in knowing that dinner tomorrow is already taken care of. Life has a funny way of getting chaotic right around 5:00 PM, but opening the fridge to find a generous pan of roasted chicken and caramelized vegetables ready to reheat feels like a present from your past self.

This recipe was born out of a desperate need to feed a crowd without spending the entire evening doing dishes. I used to think a proper Sunday dinner required three different pans, an endless cycle of wiping down countertops, and a sink piled high with colanders and saucepans. Then came the realization that letting everything roast together in a single casserole dish isn’t just a shortcut: it actually produces a far better meal.

As this dish bakes, the magic happens right at the bottom of the pan. The rich, savory drippings from the zesty, mayonnaise-marinated chicken melt down into the bed of diced baby potatoes, carrots, and onions below. The vegetables absorb all that garlic, lemon, and warm spice, roasting until the edges are golden and the Parmesan creates a crispy, nutty crust.

Making a big batch means tonight’s effortless, comforting feast transforms into the kind of savory, hot leftover lunch that makes the whole midday break feel like a luxury. The flavors settle and deepen overnight, making day two arguably even better than day one.

Ingredients

For the Chicken

  • 8 chicken thighs
  • 1 tbsp seasoning salt
  • 1 tbsp paprika
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp Italian seasoning
  • 1 tsp ground cumin
  • 1 lemon, juiced
  • 2 tbsp mayonnaise

For the Vegetables

  • 1½ lbs baby potatoes, diced into 1-inch chunks
  • 1 lb carrots, cut into ½-inch rounds
  • 1 red onion, finely diced
  • 8 cloves garlic, minced
  • ⅓ cup butter, melted
  • 1 cup shredded Parmigiano-Reggiano or Parmesan cheese
  • 2 tsp paprika
  • 2 tsp dried oregano
  • 2 tsp garlic powder
  • 2 tsp salt
  • 2 tsp black pepper

Instructions

  1. Marinate the Chicken: In a bowl, whisk together the mayonnaise, lemon juice, and all spices until smooth. Add the chicken thighs and toss until thoroughly coated. Let sit at room temperature while prepping the vegetables.
  2. Prepare Vegetables: Preheat oven to 400°F (200°C). Dice baby potatoes into 1-inch chunks and cut carrots into ½-inch rounds. Add potatoes, carrots, red onion, garlic, spices, and melted butter to a 9x13-inch casserole dish and toss thoroughly.
  3. Par-Bake Vegetables: Bake the seasoned vegetables uncovered for 20 minutes to give them a head start.
  4. Add Cheese & Chicken: Remove the casserole dish from the oven. Stir the vegetables, then sprinkle the shredded parmesan cheese evenly over the top. Arrange the chicken thighs in a single layer over the vegetables, pouring any remaining marinade over the meat.
  5. Final Bake: Return the dish to the oven and bake for an additional 40 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are fork-tender.
