Making 350 dumplings sounds like a wild amount of work until you turn it into an event. For us, this recipe was never just about meal prep; it was our excuse to get together, hang out, and turn someone’s kitchen into a full-on assembly line.

Whenever we host a dumpling night, we rotate homes, clear off the counters, and get to work. Ten packages of wrappers sit in the middle of the table alongside three giant bowls of filling: pork with chives, beef with Chinese celery, and pork with shrimp.

Everyone grabs a tray, claims a station, and starts folding. Between catching up, snacking, and arguing over whose pleats look the best, the wrapping turns into pure muscle memory. You scoop the filling, wet the edges, pinch it shut, and set it down. Before you know it, every baking sheet in the house is packed with row after row of fresh dumplings.

We always cook up a fresh batch right then and there to eat together, which is the best part of the whole night. Once we’re full, we freeze the rest flat on the trays, split them up into freezer bags, and everyone goes home with about a 80 ready-to-cook dumplings. Having that massive stockpile waiting in your freezer for a quick pan-fry weeks later makes the whole thing totally worth it.

Special thanks to Mark for showing us how it’s done.

Ingredients

Scallion & Ginger Water

  • 2 scallions
  • ¾ inch fresh ginger
  • 1 tbsp Sichuan red peppercorns
  • ¾ cup room-temperature water

Bulk Ingredients Divided Across all Fillings

  • 65 ml light soy sauce
  • ½ tbsp chicken powder or bouillon
  • ½ tbsp white sugar
  • 1.5 to 1.75 tbsp coarse salt
  • ⅔ tsp white pepper
  • ½ tsp sesame oil
  • 10 packages of Northern-style dumpling wrappers (~40 wrappers per pack, ~400 wrappers total)
  • Neutral oil like canola or vegetable for testing
  • Peanut oil ideal for pan-frying

Filling Variation 1: Pork Dumplings

  • 2 lbs ground pork (80% lean / 20% fat)
  • 1.5 packs fresh chives

Filling Variation 2: Beef & Pork Dumplings

  • 2 lbs ground beef (80% lean / 20% fat)
  • ½ lb ground pork (80% lean / 20% fat)
  • 1 pack Chinese celery

Filling Variation 3: Pork & Shrimp

  • 2 lbs ground pork (80% lean / 20% fat)
  • 1 lb shrimp
  • 1 pack of chives or Chinese celery

Ingredient Note: If using meat leaner than 80/20, add 1 whole egg to maintain moisture. Target an 80/20 blend and avoid meat with more than 35% fat.

Instructions

Prep Vegetables & Proteins

  1. Smash the ginger and scallions for the steeping liquid. Slice the scallions diagonally into 1.5-inch pieces.
  2. Wash, dry, and finely chop the chives and Chinese celery.
  3. Peel, devein, and finely chop the shrimp until it reaches a coarse paste-like texture.

Make the Ginger-Scallion Water

  1. Combine the smashed ginger, scallions, Sichuan peppercorns, and ¾ cup room-temperature water in a small bowl.
  2. Let steep for 5 to 10 minutes (do not steep longer, or the floral aroma turns harsh).
  3. Strain out the solids, reserving the infused water. Alternatively, blend and strain for a bolder flavor.

Mix & Test the Filling

  1. Combine your chosen meat combination, chopped vegetables, and base seasonings (soy sauce, chicken powder, sugar, salt, white pepper, and sesame oil) in a large bowl.
  2. If using meat leaner than 80/20, crack in 1 egg to maintain moisture.
  3. Slowly pour in 6 tablespoons of the strained ginger-scallion water.
  4. Vigorously mix in one direction until the meat turns sticky, cohesive, and fully absorbs the liquid with no pooling at the bottom.
  5. Heat a splash of neutral oil in a small skillet over medium heat, fry a small spoonful of filling, and adjust seasonings to taste.

Wrap the Dumplings

  1. Fold: Place a small spoonful of filling in the center, lightly brush water around the edges, fold in half into a crescent moon shape, and press the edges firmly together to seal.

For Northern Style Fold: Place a flat spoonful of filling in the center of the wrapper, lightly brush water around the edges, pinch the top center closed, and squeeze the outer edges firmly toward the center.

Season the Pan & Cook

  1. Season the Wok/Skillet: Heat a wok or heavy skillet over high heat until smoking. Add ½ cup neutral oil, swirl to coat, and pour out the oil once the edges smoke. Return to high heat until smoking again, then pour in fresh cooking oil and lower to medium heat.
  2. Pan-Fry: Arrange dumplings flat-side down in the pan and fry for 2 to 3 minutes until the bottoms are golden brown.
  3. Steam Finish: Carefully pour ¼ cup water into the pan around the dumplings and cover immediately with a lid. Steam for 5 to 7 minutes until the wrappers turn translucent and the meat is cooked through.
  4. Crisp Up: Remove the lid and let any remaining moisture evaporate so the bottoms crisp up again. Serve hot.
