The secret to a good stir-fry is high heat and speed, and this dish delivers both. By blistering the broccoli first, you lock in a bright green crunch before high-heat searing the shaved beef for quick, steak-quality bites without ever pulling out a cutting board.

Once the beef is browned, you toss the Thai wheat noodles directly into the pan with the vegetables and meat. A quick pour of Soyaki sauce and a spoonful of chili onion crunch coat everything in a sweet, savory, and lightly spicy glaze. It is a single-pan meal that comes together faster than takeout, leaving you with incredible flavor and almost no cleanup.

Ingredients

  • 1 bag of broccoli
  • 1 lb. shaved beef
  • 2 packs Thai Wheat Noodles
  • 1/4 cup Soyaki sauce
  • 1 spoonful of chili onion crunch

Ingredient Note: Not shopping at Trader Joe’s? Trader Joe’s Soyaki is a white-label version of Soy Vay Veri Veri Teriyaki, so they are the exact same sauce. You can swap in Soy Vay and grab A-Sha Hakka / Squiggly Noodles in the Asian food section of any regular grocery store.

Instructions

  1. Cook the Broccoli: Heat a tablespoon of oil or a splash of water in a large skillet over medium-high heat. Add the broccoli, cover with a lid, and steam or sauté for 3 to 4 minutes until tender-crisp. Push the broccoli to the edges of the pan.
  2. Sear the Beef: Increase heat to high. Add the shaved beef to the center of the pan and cook for 2 to 3 minutes, breaking it apart until fully browned.
  3. Add the Noodles: Add the Thai noodles directly into the pan with the beef and broccoli.
  4. Sauce & Combine: Pour in the Soyaki sauce and add the chili onion crunch. Toss everything continuously for 1 to 2 minutes over medium-high heat until the noodles, beef, and broccoli are evenly coated and heated through. Serve hot.
